Experiment No. 2: homemade tortillas - ¡Ole!

I will probably never eat store-bought tortillas again after trying these! OK, I will, because I'm lazy. But these definitely kick up the flavor and enjoyment of taco night, so thanks to my mother-in-law for suggesting them.

It's worth the few extra minutes to whip them up, and you can use the 10 minutes while the dough is resting to prepare your other fixings. Best of all, it's not a recipe that requires you to dirty 10 bowls and three pans on the way to your destination.

As you can see, we tried using one of our less photogenic tortillas for a photo shoot with our chonky and beloved bun Celeste. It ... did not go great. She actually looks terrified by her flour sombrero. We rewarded her patience with some bunny-appropriate treats and lots of head pets.

Back to the recipe. As this Taste of Home recipe promises, they are soft and chewy. And only four ingredients! (Three, if you don't count water.) 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 3/4 cup water

  • 3 tablespoons olive oil

What I learned:

I'm sure its possible to overwork the dough, but I think I may have under-worked it slightly? The instruction to "knead 10-12 times" didn't quite seem like enough.

As with most things, starting with a lukewarm pan is not helpful. Bring to medium heat and use a light coating of some oil or grease as the recipe instructs.

What would you like to see me attempt next? I'm always open to suggestions, but preferably something I can make with common baking ingredients since multiple, spontaneous trips to the store are not currently recommended. Quarantine Lyfe, am I right?
